Creamy Herb Dressing

This oil-free dressing packs a lot of flavor with a hearty dose of nutrients. Delicious to mix traditional greens with, but also a wonderful topper for a bowl or can be used nicely as a dip.

Add variety to the flavor by swapping out the herbs. Swapping the parsley for cilantro and the thyme for some mint will give a whole new spin on the dressing. Use whatever herbs you have on hand, just use less of the stronger herb. You can also adjust the amounts of herbs according to your preference. I like I strong herbal flavor, so lean towards adding more. 

Preparation Time:  5 minutes, not including soaking time.
Ingredients:

1/2 cup raw cashews

1-2 cups loosely packed parsley

1 Tablespoon fresh thyme

1/4 cup lemon juice

1/2 cup water (not including soaking water)

1 small garlic clove

1 Tablespoon apple cider vinegar

1teaspoon dijon mustard

1 teaspoon Himalayan sea salt

Place cashews in a bowl. Add enough water to just cover the nuts. Soak for 2-4 hours. Strain then place soaked nuts in blender. Add the rest of the ingredients to the high speed blender and blend until smooth. Add water to thin to desired consistency. Store in refrigerator.
