A simple salad with a giant punch of flavor. This salad can dress up any meal or can be a meal of its own! It is also very accessible even for those who may have a slight fear of the dark green. The dressing and the creaminess of the goat cheese soften the "greenness" of the kale flavor. Enjoy!
Preparation Time: 10-15 minutes
1 head dinosaur kale, de-stemmed and shredded
1 Red bell pepper, diced
2 ounces Soft goat cheese, crumbled
1/2 cup Marcona almonds
1/3 cup Extra virgin olive oil
1/8 cup Balsamic vinegar
1/2 teaspoon Dijon mustard
1 teaspoon maple syrup
1/2 teaspoon salt
Place shredded kale in a bowl. Mix all the dressing ingredients together in a separate bowl then toss with the kale, coating well. Toss red bell pepper with kale. Sprinkle goat cheese and almonds on top. Enjoy!
