Less-Stress Almond Pumpkin Balls
These balls are delightful little package of nutrients and energy. The perfect little snack or light breakfast. I love having these types of things ready to go in the refrigerator instead of reaching for a bar. While energy balls and bars are very similar foods in my mind, the fact that one is fresh and in your refrigerator versus being processed and packaged, makes me happy.

What also makes me happy is that there are so many nutrients loaded into one of these little balls with the seeds, nuts, pumpkin, and maca! Maca is a wonderful addition to help the body manage stress. It is an adaptogen, which helps the body adapt to stress it is under, giving you relief to the symptoms of stress during peak periods in life!

These are easy to make and store in the refrigerator for up to 10 days. They could easily be modified to be nut free by swapping out the almonds in the recipe for pumpkin seeds and rolling them in coconut!
Preparation Time: 20 minutes
Ingredients:
Makes 30 balls

2 cups oats
1/2 cup sunflower seed butter
1/4 chia seeds
1/2 cup pumpkin puree
1/2 cup slivered almonds
2 T maca
1 teaspoon almond extract
1 teaspoon nutmeg
1/2 cup honey
pinch of salt

1/2 cup mini chocolate chips
1 cup slivered almonds, roughly chopped for rolling
​
Place all ingredients except the chocolate chips into a food processor. Pulse until ingredients are well mixed. Add chocolate chips and pulse a few more times. Roll into 1-2" balls, then roll through chopped slivered almonds. Place in refrigerator until serving.
