Citrus Cabbage Slaw

This salad is SO easy to make and is ALWAYS a hit with the young and the old, the conservative and the adventurous, the veggie-haters and veggie-lovers.

If you have a bag of cabbage slaw on hand, you can whip this salad up in less than 5 minutes. It's a summer go-to for me for all those last minute BBQ gatherings.

People look at you in shock when you tell them the dressing is literally orange juice, lime, and salt.

 

Simple really does always prove to be the best.

Preparation Time:  5 minutes
Ingredients:

1 head of cabbage shredded 
1 bunch of cilantro (finely chopped) 
1 bunch of scallions (thinly sliced) 


1 1/2 cup orange juice

1/2 fresh lime juice

Salt to taste (add until orange and lime juices are well blended)

Mix cabbage, cilantro, and scallions in a bowl. In a separate bowl, mix the orange juice, lime juice, and salt. Add enough salt so that you cannot differentiate between the orange and lime flavors. It will likely be more salt than you would think! Pour dressing onto veg mixture and *toss well.

*I like to toss it a few times and let it sit in-between each toss so that the cabbage soaks up the dressing and softens a bit.
