Elderberry Blue Syrup


This elixir is something we heavily rely upon during the cold and flu season. Elderberries are well-known for their immune boosting properties.  Blueberries make this more palatable for kids and pack an anti-oxidant punch! My kids each get a Tablespoon or so of this a day. I swear by it! our household is so much healthier because of it. 

Hands-on Preparation Time:  10 minutes

Yield: ~2 cups

3/4 cup elderberries, dried*

6 cups water

1/2 cup blueberries, dried*

1 cup honey

1 T pure lemon juice

Place all ingredients in a stove pot. Bring to a boil. Turn down to a simmer and let it reduce by almost half. Strain with a fine mesh strainer or cheese cloth. Store in a refrigerator for ~2 months.

*Soak dried berries (in water for cooking) for 30-60 minutes prior, if possible.
