Peanut Dream Sauce

IMG_9428.jpg

This sauce makes everything better. Even if you don't happen to be a peanut fan, it is just as delicious with sunflower seed butter. The sweet and salty creaminess makes the most simple of ingredients into a extraordinary event for your mouth.

I always double or triple the recipe and freeze a couple small jars of it. In a pinch, I can use a jar for a really fast dinner, fit for company. Saute some greens, grill some chicken or tempeh, drizzle this over the top, and, bam, dinner is complete.

For my kids, I often make chicken kabobs and let them use this as a dipping sauce.

Preparation Time:  5-10 minutes
Ingredients:

1/2 cup peanut butter (or sunbutter for nut free)

1/4 cup apple cider vinegar

1/4 cup olive oil

1/4 cup lime juice

1/4 cup + 1 T maple Syrup

1 cloves garlic

1 inches ginger root, peeled

1/4 cup water

3/4 teaspoon sea salt

1 1/2 teaspoons toasted sesame oil

Place everything in a high speed blender and blend until smooth. Store in refrigerator. Freeze extra.
