Seasonal Kale Salad


This salad. Basic. But, none-the-less, a hit every. single. time. 

Basic ingredients are the greens and the dressing. Everything else is about playing with the color and texture. So many flavors work with here, which is why it can so beautifully shift with the seasons.

For summer, add berries. Fall, hazelnuts and squash. Winter, pear and a hard cheese. Spring, roasted asparagus! Truly, the variations are endless. 

The variation pictured above has roasted delicata squash, toasted hazelnuts, and currants. 

While this recipe calls for chopping the salad base ingredients, a pre-cut kale slaw can also be used.

Preparation Time:  Varies depending on ingredients used.
Base Salad Ingredients:

1 bunch of kale, finely sliced

2-3 carrots, fine matchsticks

1 small head of red cabbage, fine sliced

Optional ingredients pictured above:

1 small roasted delicata squash

1 cup dried currants

1 cup toasted hazelnuts

Prepare all of the base salad ingredients. Prepare optional ingredients, as needed. Toss dressing with base salad ingredients no more than 20-30 minutes prior to serving. Layer optional ingredients on top of salad. If any optional ingredients are cri
